Vinification |
The whole grapes are softly pressed. The alcoholic fermentation occurs in steel vats without the skins using natural yeasts. Malolactic fermentation is not carried out. |
Ageing |
15 months in contact with the lees in steel vats, then 12 months in the bottle. Only membrane filtration before bottling. |
Pairing |
Ideal as an aperitif, it accompanies appetizers and vegetable and fish dishes. Excellent with raw fish and sushi. It is a perfect pairing with the typical local cuisine, such as fried small crabs, 'polenta Biancoperla' made of white whole grain corn flour and fish, rice with peas, and stewed cuttlefish. |
