Harvest |
Individual for each vineyard, from the 11th to the 20th of September. In terms of winegrowing, 2007 is to be considered anomalous due to one of the hottest periods from January to September of the latest 10 years as well as due to the leak of precipitations during the winter and further on in the year. Only occasional storms, some of which were exceptionally violent, accompanied by the greatly feared hailstones, mitigated a summer which risked jeopardising a balanced vegetative cycle. Similar to 2003 the grape harvest took place very early. As budding and blooming were early too, the vegetative cycle and consequent ripening of the grapes respected the normal durations, simply bringing everything forward by 15/20 days. |
Production technique |
Maceration: soft, lasting up 10 days in steel. Alcoholic fermentation: 20 days in steel. Malolatic fermentation: in French oak barrels with a capacity of 500 litres, half of them used for the first time. Blending: immediately before bottling, in Dicember 2008. |
Vinification |
Each vineyard was vinified separately. |
Ageing |
12 months in the same barrels where malolactic fermentation took place, followed by 9 months in the bottle. |
