Harvest | The freshly harvested grapes arrive at the winery intact and are quickly crushed and gently destemmed to extract only the noblest and most aromatic fractions from the skin and outermost area of the berry. |
Wine making | Fermentation, at a controlled temperature, takes place in thermo-conditioned tanks. Maceration on the skins lasts about 8 days, with frequent pumping-over to allow the must to gather all elements present and extract the colour. Racking occurs when the product is almost completely dry. |
Aging | Traditional Slavonian oak barrels help to make the wine more harmonious and increase the finesse of the bouquet. The sweet sensation is mainly due to moderate acidity and delicate tannins. Barbera d'Alba reaches maturity after 2 years from harvest, and the ageing period is between 2 and 6 years. |
