||At the temperature-controlled fermentation in steel tanks and a small part in oak barrels, in spring, the draft begins with a slow refermentation in bottle according to the traditional method of Franciacorta. The bottles remain in the pile for at least 60 months (total from the 68-month harvest) guaranteeing the unmistakable bouquet due to the contact and autolysis of the yeasts. After the disgorgement, with the addition of a sugar-free dosage syrup, Gualberto makes a further refinement in the cellar for a few months.
