Vinification |
After harvesting, grapes are crushed before pressing and then remained in the press for a brief period to favour the absorption of the aromas by the must. The first must is obtained by a natural static settling, eliminating impurities. The fermentation then begins, which is carried out until 5° of alcohol is reached. The fermentation then stops by refrigeration. The final stage consists of the fining, the filtration, and the bottling of the finished wine. |
Pairing |
Fresh fruit, such as strawberries, peaches, and berry fruit. It also pairs with dry pastry and the typical Italian Panettone. |
