Vinification |
The grapes are destemmed, and the pomace placed in stainless steel fermentation vats where the process begins with indigenous yeasts contact with the skins for 19-21 days. Regular pumpovers occur during this period. Pumping the must into concrete vats follows fermentation, where malolactic fermentation takes place. |
Ageing |
The wine is then transferred to French wood barriques for 24 months, and then aged in bottles for at least 24 months. |
