Harvest |
Sangiovese di Palazzo di Varignana is produced without the use of added sulphites. Manual harvesting allows special attention to be paid to the selection of the grapes already in the vineyard. |
Vinification |
Alcoholic and malolactic fermentation takes place in cement tanks at a controlled temperature not exceeding 24 °C; maceration on the skins lasts a total of 8-10 days. |
Ageing |
The wine matures for a period of 8 months, part in cement casks and part in second-passage French oak barriques. After blending, the last step consists of a resting phase of about 3 months in the bottle, which completes the ageing process. |
Pairing |
This wine, characterised by its excellent aromatic complexity and tannic texture, goes perfectly with red meats, roasts or a fine dish of tagliatelle with Bolognese sauce. |
