||Terra Rossa up to 300 m a.s.l.
||The Perricone is harvested by hand in small crates in the first and second decade of September.
||The bunches of grapes are transported to the winery and destemmed using delicate methods to best preserve the integrity of the skin. Fermentation takes place at a controlled temperature of 24-26 °C.
||The wine is aged for about 1 year in stainless steel and in the bottle before sale.
||Fresh cheeses, macaroni with stewed pork, lamb chops, typical sicilians meet rolls.
