Origin From the company's vineyards in Passirano and Paderno Franciacorta (Brescia).
Soil composition Fluvio-glacial and deep moraine.
Cultivation system Sylvoz and Guyot.
No. plants per hectare Sylvoz with 3,000 vines/hectare and Guyot with 5,000 vines/hectare.
Yield per hectare Not exceeding 9,000 kg/hectare.
Harvest By hand, in the first half of August. Only the healthy, perfectly ripe bunches are collected in small, perforated crates.
Vinification Soft pressing with very low yields (55%) and use of the first must only. Fermentation with selected yeasts at a controlled temperature of 16-18°C, 85% in concrete vats and 15% in oak barrels of several passages.
Ageing The second fermentation occurs in the spring following the harvest. Minimum 36 months on the lees in the bottle and at least 3 months after disgorgement.
