|Composition of the land
||Hilly, formed during the Eocene presents an alternation of marl (calcareous silt and clay) and sandstone (cemented sands). Waterproof causes the superficial flow of water resulting erodibility of the soil, which leads to a morphology very sweet.
||Manual harvest in late September.
||After harvesting the grapes are separated from the stems. The juice and pulp undergo a cold maceration, then a slight pressing to separation from the skins. About 15% of the must is fermented in oak barrels, the rest in stainless steel vats.
||The wine is left to rest about eight months on yeasts and then bottled.
||It goes mainly with San Daniele prosciutto and cold cuts, cheeses, fresh and lightly seasoned dishes of eggs and vegetables, baked fish.
