	Perlage Abundant and persistent mousse.
	Colour Light straw yellow, with slight greenish reflections.
	Bouquet Elegant and intense bouquet, fragrant and complex, of ripe white-fleshed fruit typical of Chardonnay. Delicate notes of hazelnut and lightly toasted bread, due to long ageing on its lees.
	Flavour The taste expresses its mountain character: assertive, savoury, mineral and fresh.

Yield per hectare	60 hl
Harvest	Manual harvesting in the first ten days of September, soft pressing of the grapes and use of the free-run juice only.
Vinification	Fermentation and ageing for approx. 85% in temperature-controlled stainless steel tanks and the remainder in casks and tonneaux where malolactic fermentation also takes place.
Ageing	Foaming in the bottle according to the Metodo Classico and subsequent ageing on the lees for over 30 months at a constant temperature in an underground cellar.
