	Perlage Abundant and persistent mousse; very fine and persistent perlage.
	Colour Brilliant straw yellow.
	Bouquet Man Nature has a rich, assertive and complex bouquet, with hints of white-fleshed fruit and floral notes given by the mountain Chardonnay.
	Flavour A note of strong minerality, an expression of the dolomitic-calcareous soil of origin, characterises the taste. A very persistent, extremely fresh aftertaste that cleanses the palate and brings to mind dried fruit and brioche bread.

Soil composition	Calcareous limestone.
Cultivation system	Pergola Trentino simple and Guyot.
Yield per hectare	50 hl
Harvest	Manual harvest in mid-September, careful manual selection of the grapes and soft pressing of the whole bunches.
Vinification	Use of must flower only. Fermentation and ageing of approx. 80% in temperature-controlled stainless steel tanks and the remainder in 500-litre tonneaux, where malolactic fermentation also takes place.
Ageing	Refermentation in the bottle according to the Metodo Classico and subsequent ageing on the lees for over 42 months at a constant temperature in an underground cellar. No liqueur d'expedition is added at disgorgement to respect the dolomitic character.
