Vinification |
Grapes are gently destemmed and soft pressing occurs after a suitable cold maceration. The must is clarified by simple decantation and then fermented in stainless steel tanks with the inoculation of selected yeasts from Friuli. After three days, the wine is racked into oak barrels, where it completes alcoholic and then malolactic fermentation. |
Ageing |
In oak barrels, where lysis of the yeasts takes place. The development of tertiary aromas will be completed in the years to come. |
Pairing |
Shellfish, oysters, caviar, mussels, seaweeds and other salty flavours. It perfectly pairs vegetables and light meats with delicate and rich dressings. |
