||Priority is given to a dozen or so crus coming mainly from the southern and northern sectors of the Montagne de Reims - including the famous Côte de Bouzy - in particular the crus of Ambonnay, Bouzy, Louvois and Tours-sur-Marne
||The grapes are carefully selected and de-stemmed.
||Maceration, lasting 48 to 72 hours depending on the harvest, allows the colour to be extracted and all the aromatic richness of the Pinot Noir to be expressed.
||Its aromatic depth allows it to be served with marinated raw fish, grilled prawns, exotic dishes, Parma ham and red fruit desserts. The more daring will pair it with Asian or Indian cuisine.
