A Champagne obtained using only 100% Chardonnay grapes and proposed in this little known version "sec", even pastry. This particular cuvée was created to satisfy the requests of some great French chefs, first of all the famous Bernard Loiseau and Pierre Gagnaire, who had expressed the desire for a product that could accompany their desserts, especially those based on fruit. A wine obtained by blending two young vintages, with the addition of 20 g/l of fructose.

Sweet scents: apricot, straw, sugared almond, nougat, candied sugar, honey, lime blossom, broom, licorice, cappuccino foam, cream and apple crumble.

A sweet and spicy flow, sparkling and salty, exotic and refreshing, with the taste of peach in syrup and with a peanut butter finish.

Production technique A wine obtained from the assembly of two young vintages, with the addition of 20 g/l of fructose.
Vinification After pressing the must is put in traditional oak barrels for fermentation, which begins without the addition of selected yeasts and occurs with weekly battonage during the Winter and monthly during the Summer. This process continues naturally without any intervention and sometimes lasts until July. Malolactic fermentation is contained, the wine's natural acidity is not neutralised as the fertilisers do not contain mineral potassium and no filtration is ever carried out.
