Soil composition Clayey, limestone, gravel. These features give this wine a unique character.
Harvest By hand, with small containers.
Vinification After a short maceration and whole cluster crushing, the must is racked by natural sedimentation. Fermentation is carried out at a controlled temperature in stainless steel vats.
Ageing On the lees for 8 months in stainless steel tanks and large oak barrels without malolactic fermentation.
Total acidity 6.50 gr/L
Residual sugars 1.30 gr/L
Production year 6,000 bottles
