Harvest August and early September.
Production technique Using the traditional Champagne presses of 4000 kg. Fermentation in oak barrels of 200 liters for the chardonnay and barrel of 6000 liters for the pinot noir.
Ageing Malolactic fermentation done in cuves and resting on the lees for at least 36 months before the degorgement.
Allergens Contains sulphites
Pairing Excellent for the aperitif and as an alternative to seafood, fish etc.
