After triage the grapes are de-stemmed and then transferred by hand into tank. Fermented with indigenous yeasts, with only gentle foot-treading of grapes. Malolactic fermentation completed in French oak, 228 and 500 litre vessels. |
| Ageing |
14 months aging in barrel with light filtration and no fining. |
