History	Saint Aubin is situated in the heart of the Côte des Blancs, between Chassagne Montrachet and Puligny-Montrachet; white and red wines are produced here, but Chardonnay remains predominant.
Climate	Altitude: 300-450 m. a.s.l. Exposure: South-West.
Soil composition	Shallow and pebbly limestone soil.
Vinification	The grapes are pressed immediately after arrival in the vats without prior crushing. After gentle pressing and light settling, the must is put directly into the barrels.
Ageing	Aged for 16 months, of which 12-13 months in barriques. Barriques are 20% new.
Allergens	Contains sulphites
Pairing	Perfect as an apéritif, it goes very well with fish or shellfish.
