Vinification |
The grapes are sorted on a vibrating table to remove dry berries, leaf debris and stalks. They then pass to another sorting table for the removal of any grapes that are unripe, damaged or showing signs of rot. The grapes are lightly pressed to avoid the risk of oxidisation. Fermentation is begun slowly and naturally, using native yeasts. |
Ageing |
Part of the resulting wine is aged in oak barrels, the rest in tanks, for 12 months. The two components are blended before bottling to balance the fresh acidity of one and the softness of the other. |
Pairing |
This Saint-Aubin makes an agreeable aperitif. Alternatively, it goes well with a goat’s cheese salad or fish in a hollandaise sauce. |
