Harvest |
Towards mid-September. The grapes are harvested and placed in boxes with only manual sorting. |
Vinification |
Cold pre-fermentative maceration is followed by alcoholic fermentation in temperature-controlled steel tanks for about two weeks, during which frequent pumping over and 'délèstages' are carried out. Post-fermentation maceration on the skins follows and, after racking, the wine is transferred to barriques, where malolactic fermentation occurs. |
Ageing |
About 10 months in French oak barriques and a further 10 months in 25hl barrels. This is followed by bottle ageing for about 6 months before marketing. |
