History |
CruPerdu is made from Chardonnay and Pinot Noir grapes of the same vintage. In the summer of 1986, Luigi Bersini, Chef de Cave at Bonomi, leaving the vineyards to head into the woods, spotted some vines among the ivy and wild shrubs. He discovered that the forest had taken over a portion of land over the years, hiding an old vineyard. Passion and love for the land convinced the forest to retreat to allow those precious rows of vines a second life. The lost vineyard, CruPedru, gives its name to this splendid cuvée. |
Harvest |
From the 10th to the 25th of August, with a meticulous selection of the bunches. |
Vinification |
After a gentle pressing to extract only the best must, the vinification takes place using cold techniques, which make it possible to enhance the aromas and finesse of the wine; fermentation occurs at about 14°C. |
Ageing |
After the first fermentation in steel and wood, part of the cuvée ages for about 8 months at a controlled temperature before taking foam. The wine then evolves and ages patiently in the bottle for over 36 months. |
Pairing |
It pairs well with all meals. It pairs magnificently with delicate fish dishes. Excellent with crustaceans and raw fish. It is finally ideal with beef tartare. |
