|Composition of the land
||The sandy clay soil, the afternoon sun and the wind from Lake Garda provide the perfect conditions for the vines.
||The hand-selected grapes are left to macerate in a large wooden barrel for two weeks. A regular manual punching down of the trester head leads to an optimal extraction of colour and aroma.
||This is followed by the biological acid reduction, the wine is stored for a year in a 500-litre oak barrel and then for a further eight to ten months in a big oak barrel. The bottled wine rests for a year in the cellar before being sold.
||Ideal with grilled or roasted meat, game or with grilled fish. The perfect accompaniment to mature cheese.
