Bouquet

Complex and fine nose. Red fruits (black cherry, morello cherry) in jam, dried red flowers, vanilla, cocoa, nutmeg, balsamic and ethereal notes.

Flavour

Full and round but still dynamic on the palate. Elegant and integrated tannins. Very long fruity and balsamic finish.

A perfect match for stews, important meat dishes such as game, grilled meats, mature hard cheeses.

Harvest	The Sangiovese grapes are carefully selected, harvested in small wooden crates and left to dry in drying lofts with controlled humidity for at least 7 weeks. This process allows for the concentration of sugars and aromas.
Vinification	At the end of November, the grapes are crushed and destemmed. This is followed by a 3-week maceration and fermentation until the sugars and alcohol are balanced.
Ageing	65% of the wine then matures in French wood Tonneaux for 12 months and 35% in American wood Tonneaux for 12 months.
Residual sugars	14.00 gr/L
Allergens	Contains sulphites
