Harvest |
Late September to mid-October. After harvesting, which is already slightly late, the grapes are dried on racks for 40 days at controlled temperature and ventilation. |
Vinification |
Vinification takes place at a temperature of 25-26°C and lasts 10 days, during which the skins are kept in contact with the must. Following racking, malolactic fermentation takes place thanks to an inoculum of selected bacteria, leading this wine to more excellent stability and softness. |
Ageing |
Finally, the wine is aged in both stainless steel tanks and barriques. |
Pairing |
It pairs well with cheeses, Mora Romagnola cold cuts, or slow-cooked red meat dishes. |
