Wine making Obtained from pure Cannonau grapes, cultivated in spurred cordon espalier system, in soils deriving from granite disintegration with a medium texture, tending to sandy, which give it great balance and minerality. Vinification takes place in stainless steel tanks for 16 8 days at a controlled temperature, during which pumping over and punching down are carried out daily to allow the balanced extraction of polyphenolic substances. The transformation of malic acid into lactic acid takes place immediately after the alcoholic fermentation.
