What kind of wine it is

Soave Classico Fittà is a still organic white wine that enhances Garganega in the Soave Classico area. It maintains a dry and elegant style, preserving a marked freshness thanks to the decision not to carry out malolactic fermentation. On the nose, it is sharp, dominated by smoky and sulphurous notes with slight citrus hints. On the palate, it is long and expressive, combining fruity and almond sensations in a distinctly savoury finish. Its particular mineral structure makes it excellent for pairing with shellfish and seafood carpaccio, mature cheeses and poultry, served at an ideal temperature between 11 and 14 °C.

Where it comes from

This wine originates from the hillside vineyards of Suavia, situated at 255 metres above sea level in the Fittà cru, with south and east exposures. The peculiarity of the area lies in the volcanic soils, composed of deeply weathered basalts that give the organoleptic profile a distinct mineral imprint. The historic vines, with an average age of eighty years, sink their roots into this complex geological matrix, ensuring a slow ripening of the grapes and a high natural aromatic concentration, a faithful expression of careful organic viticulture.

How it is produced

Work in the cellar begins after a careful manual harvest in mid-October. The must ferments at a controlled temperature in steel tanks for fourteen days, a deliberate choice to preserve the fragrance of the fruit. The structure of the sip is consolidated through a prolonged ageing on fine lees for twelve months in steel, which gives depth and aromatic complexity. This is followed by a single membrane filtration and a further resting period of two years before release. This careful management ensures a remarkable ageing potential, allowing the wine to evolve gradually over a period ranging from five to fifteen years.

The castle is the one in Soave: a heritage from the Middle Ages, when the town was still called by the old name of Suavia; Giovanni and Rosetta’s daughters, however, have been the main female characters in this story since the start of the twenty-first century.

Our family has been living and cultivating the land since the nineteenth century in Fittà: a small rural village mounted like a precious stone on the hills of Soave Classico. The history of Suavia however began later, in 1982, when Giovanni and Rosetta (the father and mother), aware of the great potential of their area, decided to set up on their own and make their mark, crushing their grapes and making their own wine.

Today we three sisters, Meri, Valentina and Alessandra, carry on the family tradition and run the winery always working here in Fittà, where it all started.
