Description
What type of wine it is
The Sanct Valentin Pinot Grigio from San Michele Appiano is a prestigious still white wine, an authentic expression of the Alto Adige appellation. Produced using Pinot Grigio grapes, this wine stands out for being structured and complex, ensuring considerable ageing potential. On the palate, it is fresh and enveloping, characterised by a creamy texture and enriched by elegant fruity and vanilla notes resulting from the expert use of wood. Its deep velvety texture and solid body offer a harmonious sip, ideal for introducing the characteristics of the local area and subsequent pairings with fish soups, risottos, and white meats.
Where it comes from
The grapes for this label come from the renowned Appiano Monte vineyards, located in the heart of the Trentino-Alto Adige region, at an altitude ranging between 420 and 600 metres above sea level. The predominantly gravelly soils, rich in limestone, combined with a harsh alpine climate, create the ideal conditions for the slow ripening of the bunches. The south-eastern and south-western exposure ensures excellent solar radiation, resulting in a marked aromatic concentration. These peculiar territorial characteristics give the fruit a natural freshness and bright acidity, precisely defining the winery's elegant style.
How it is produced
The production process begins between mid and late September with a rigorous manual selection of the best bunches in the vineyard. Subsequently, both alcoholic and malolactic fermentation take place entirely in small oak barrels, where the must develops its natural roundness. This is followed by a prolonged ageing in contact with the fine lees for approximately eleven months in the same barrels, a crucial phase that enriches the gustatory structure and provides delicate toasted and buttery nuances. At the end of this period, blending takes place, followed by a further rest of at least eight months in concrete tanks before completing its journey in the cellar.
