Description

The Ancient Romans used the word ‘Pagus’ to identify a rural area of particular agricultural value. This is still true today of Pagus Camilla, part of the vineyard called Le Sondraie, which lies near a natural oasis of the same name. Here, alluvial sediments with elevated mineral content yield a ‘rare’ 100% Vermentino wine.

The wine has intense aromas reminiscent of the Mediterranean, expressing the complexity of aromatic herbs and citrus scents.

One can feel the purity of the Vermentino on the palate with a nice tastiness and a structure that allows for great length and volume. It is a great Vermentino wine with an enchanting balance, and its ageing in the bottle is interesting even after a few years.

Pairings

Pagus Camilla is the ideal accompaniment to both sea and lake fish, with a preference for the great raw fish dishes, mullet Livornese style, sardines from Lake Garda and the refined and varied preparations in tempura. It is also a perfect wine to be enjoyed at the end of a meal with the Doppia Panna cheeses from the Venetian Prealps and the best selections of Pecorino Toscano. Finally, it is also recommended with risotto, leek cream, lime oil and green pepper.
