The wineries that form part of the cooperative - the ‘Cooperativa Riviera dei Fiori’ – are located in areas of the municipalities of Apricale, Baiardo, Camporosso, Castelvittorio, Dolceacqua, Isolabona, Perinaldo, Pigna, Rocchetta Nervina, S.Biagio della Cima, Soldano and several zones in the municipalities of Vallecrosia, Ventimiglia and Vallebona. | Harvest | The grapes, harvested by hand, are delivered by the members in the hours immediately following the harvest and are pressed extremely softly so as not to spoil the skin. |
| Wine making | Part of the grapes, before the classic white vinification, are macerated with carbonic snow for a few hours to accentuate the character and typicality. Fermentation takes place at a controlled temperature (16 8°C) in stainless steel tanks and is carried out by selected yeasts. Malolactic fermentation is prevented to preserve the freshness of the product. |
