Description
What type of wine it is
Chablis Premier Cru Vaillons from Domaine Fourrey is a still white wine produced in Burgundy, created to enhance the oenological qualities expressed by pure Chardonnay. This appellation expresses an elegant and structured profile, characterised by clear hints of white flowers, citrus fruits and a distinct mineral vein. On the palate, it presents a full and velvety structure, closing with a clean finish enriched by a delicate note of butter. Its vibrant gustatory tension is preserved thanks to a meticulous production process in stainless steel tanks, which keeps its dynamic balance intact.
Where it comes from
This white wine originates in the heart of Burgundy, within the renowned Vaillons vineyard located between the municipalities of Milly and Fleys. The vines, grown on shallow soils with a distinctive clay-limestone subsoil, benefit from excellent south-easterly exposure on the hilltop. The cool continental climate, marked by a high risk of spring frosts, is mitigated by the proximity to the River Serein, which is essential for ensuring optimal ripening. For four generations, the estate has managed the vineyards using organic and sustainable methods, in full respect of the delicate local environmental balance.
How it is produced
Production begins with a mechanical harvest, followed immediately by soft pressing to gently extract the must without stressing the grapes. The subsequent fermentation takes place entirely in temperature-controlled vats, faithfully preserving the primary aromatic imprint of the fruit. The wine then undergoes ageing in steel for between ten and twelve months, avoiding any time in wood to preserve freshness and varietal typicity. At the end of this phase, bottling takes place, which stabilises a crisp, well-defined sip with solid potential for evolution.

Since 1992, I, Jean‑Luc Fourrey, have been managing the Domaine. I studied at the Lycée Viticole in Beaune and hold a Higher Technician Diploma in Viticulture and Oenology. Today, I share this journey with my family — I am married and the father of Emile, born in 2012.
The daily work at the estate is carried out with the support of a team of seven collaborators: a sales assistant, two tractor drivers, one cellar‑and‑vineyard worker, and three vineyard workers. A group made up of three women and four men, where I encourage versatility and the continuous development of individual skills.
Our vineyards are mainly located in Milly — on my father’s side — and in Fleys — on my mother’s side — spread across both banks of the Serein River, at the very heart of the Chablis region. Read more
