Vinification |
It undergoes fermentation with maceration extended to 18-22 days. Fermentation at a controlled temperature of 26-28 °C. |
Ageing |
In Allier, Nevers and Vosges barriques and oak barrels. After an ageing of 16 months in barriques, the process continues in 30-hl oak barrels for a further 12 months. Storage in stainless steel tanks until bottling. Ageing in bottles for a further 12 months. |
Pairing |
It pairs well with savoury appetizers, grilled meats, and stewed and baked game. |
