酿造	80 quintal pneumatic press, maceration in the press for 3-4 hours at about 1°C with a must yield of 54%. Static settling at 10°C for 48 hours. Only the clear must is racked and inoculation with s. cerevisiae yeast. The wine is transferred to barriques after the start of fermentation at 15°C. Fermentation for 8 days in barriques at 18-20°C. Malolactic fermentation is almost fully carried out.
