Cabernet Franc DOC 'Didacus' owes its name to the nickname used to call Diego Planeta. A wine dedicated to Planeta's founder and his vision for the most difficult and most exciting challenge. A red wine produced from the best Cabernet Franc grapes, hand-picked in the vineyard near Menfi.

Harvest By hand, followed by manual sorting on the whole bunches, with a 2-2.5% waste.
Wine making Grapes are destemmed and crushed. The fermentation occurs in three different ways, with temperatures between 18-24°C and direct inoculation of selected yeasts. Malolactic fermentation takes place in barriques.
Aging 20 months in barriques. A battonage is carried out every two weeks throughout the ageing period.
