Destemmed and fermented in open wooden barrels. Maceration of the fruit takes place in these barrels for another twenty days, with the cap of the wine pushed down by hand daily. |

After racking, the wine is put into barriques, where it stays for twelve months. Without being filtered, it is bottled to rest in the bottle until the following year. |
