Harvest	Selected grapes are harvested in late September.
Vinification	After a short period of maceration, the must is separated from the skins, which are gently pressed. The must is stored at very low temperatures to prevent fermentation. Fermentation takes place in stainless steel for about 2 months then wine is cooled down and filtered before bottling.
