Fine bubbles, delicate string of bubbles.

Colour

Yellow gold with yellow grey hints.

Bouquet

The nose reveals concentrated. Greedy: toasted bread, butter, hawthorn honey, roasted almond. Fruity: blackcurrant, liquorice, fig, mango. Vegetal: black pepper, nutmeg with a taste of peony. The olfactory sensation is not interrupted, powerful and refined, with a touch of the local soil: 2 top growths from Montagne de Reims, Verzenay and Verzy.

Flavour

The mouth is dense and generous. It is fresh and fruity, with a creamy effervescence. The fruity density reminds that of plum and Mirabelle plum. A chalky mineral taste is refreshed by a fresh and mellow acidity. The final confirms the origin of these Pinots noirs classified Grand Cru, with greedy, spicy and fruity aromas.

Pairing

Try it with toast of foie gras on gingerbread slightly peppered and mango Carpaccio, grilled large prawns and preserved tomatoes, lobster with crayfish sauce, young pigeon baked in figs, Loin of lamb baked in thyme, ewe cheese and violet jam, Cantal and Saint-Nectaire farmer’s cheese.
