Description
Like my other Blanc de Noirs sparkling wines, Solera is made from a cuvée of wines from different vintages with the important addition of a reserve obtained using the Cuvée Perpetua method, also known as Solera. I wanted to produce a sparkling wine like certain Champagnes that I like, from Vignerons who produce "chewy" bubbles, rich, complex and capable of accompanying a full meal and provoking a beautiful emotion even if they remain in the glass and warm up. The old reserve wines impart very strong, spicy, citrusy and vinous aromas at the same time.

| Technique de production | At the second fermentation, I did not want to filter or clarify the wines; even the liqueur was not filtered, so as to keep the sensation of my perpetual cuvée intact. Therefore, expect a colour that veers towards amber tones and a sip supported by an engaging acidity. |
