Wagram

(Austria)

Region of Lower Austria, located on the left bank of the Danube, just above Vienna, which in the form of an elongated rampart, about ten meters high, separates the alluvial plain from the lower river terrace. On the border between Weinviertel and Marchfeld, the Wagram is partly cultivated with vineyards, while the nearby areas are still partly uncultivated, due to the existence of alluvial materials that are too coarse.

History
Battle of Wagram: fought on July 5-6, 1809. After the campaign in Bavaria, Napoleon had quickly pointed to Vienna, with the intention of proceeding from the Austrian capital to the north without delay, across the Danube. But the attempt to cross the Danube without the necessary preparation failed (battle of Essling of 22 May 1809). Napoleon immediately passed to the grand organisation of a new attempt at passage, to which he assigned increased forces. When everything was ready, on July 1 the large units destined for the operation were made to pass from the right bank of the Danube to the island of Lob-Aue (10 km downstream of Vienna), which divides the current of the river into two parts, the largest being able to be passed under cover of the island itself, which facilitated the difficult movement. The day before (June 30) a division had landed with various means on the left bank, to form a bridgehead to defend the troops who would later set foot there.
Typical dishes
The variety of Austrian cuisine still bears witness to the vastness of the former monarchy. Vienna, in particular, was a melting pot of gastronomic cultures: here the so-called "Zuagrasten" (immigrants) from Hungary, Bohemia, Slovakia, Transcarpathia, Bukovina, Poland, Carniola, Croatia, Trieste, Dalmatia or "simply" from the present Austrian Länder prevailed. Everyone brought their own country's recipes with them to Vienna, and Austrian cuisine absorbed the best of every tradition. Further influences, not only in the gastronomic field, are due to the Jewish culture. From eastern Galicia, for example, the "gefilte Fisch" (stuffed fish) was brought, a model for the popular carp galantine served in Austrian gourmet restaurants. The recipe for the "Beuschel" (coratella) is probably also of Jewish origin. In any case, this is what Austrian chef Ewald Plachutta (awarded three Gault-Millau hats) and gourmet columnist Christoph Wagner, who has long been involved in the history of Austrian cuisine, claim. Also from the East, the influence of Bohemian and Hungarian cuisine can be found in the famous goulash. These are dishes that have been imported from the countries of the former monarchy and that have been assimilated into traditional Viennese cuisine. Beuschel", a popular term for the upper lungs and innards of veal, is a delicious main course, mostly served with round or sliced bread dumplings.
