Savoy

(France)

Savoie and Haute-Savoie departments have small wineries on France's best ski area. They are located south of Lake Geneva in the Upper Rhône area, in the valley on the Lac du Bourget and along the Isère. The wine is cultivated up to 500 m above sea level, but the best sites are at 300 m on the lakes and on the Rhône. Both red and white wines are fresh, very pleasant to drink, often with perlage and dry, although they may show some sweetness. The character of white wines often resembles that of the Fendant wines of Switzerland. The reds were left to influence the western neighbor, the Beaujolais. Only the sparkling wines attracted some attention outside the region.

History
In 443 the Burgundians were authorized by the Roman Empire to settle in Sapaudia as foederati. With the fall of the Empire the Burgundians proclaimed the independence of their kingdom. In 534 the Burgundian kingdom, and with it the Savoy, was conquered by the Franks and followed the vicissitudes of this people who gave life to the Carolingian Empire. At the dismemberment of this, with the treaties of Verdun and Meerssen, the territory of the present Savoy was assigned to the sovereign of Italy and, within this kingdom, to its vassal, the Count of Burgundy Transjuran. In 888 the county of Burgundy Transjuran became the independent kingdom of Upper Burgundy and in 933 joined the kingdom of Lower Burgundy to give life to the kingdom of Burgundy. In 1023 the kingdom of Burgundy became part of the Holy Roman Empire and the current territory of Haute-Savoie was divided into three dominions or baronies: the Chiablese, the Genevese and the Faucigny, which were initially invested with the dynasty of local lords. In 1128 Amadeus III of Savoy took possession of Chiablese. In 1304 the Faucigny passed to the Dauphiné of Vienne before being ceded to Amadeus VII of Savoy (the "Red Count") in 1355. Finally, in 1401, the Genevese was sold to Amadeus VIII of Savoy. So that at the end of the Middle Ages the whole territory of the current department depended on the Savoy dynasty. Viticulture in Savoy has been documented in writing since the 11th century.
Typical products
The wine district of Savoy, extends from Geneva to the north to Grenoble to the south. The vineyards are concentrated on the shores of Lake Geneva and the Lac du Bourget and along the Rhone and Isère rivers, all waterways that contribute to mitigating the climate. South of Chanbéry is located in Premont and Abumes, where light wines are made, and sometimes sparkling wines, with the Hacquère vine. On the right bank of Isère there are several countries of which the most important, perhaps, is Arbin, which produces red wines for aging with the Mondeuse grape. On the slopes of the mountain La Charves on the left bank of Lac du Bourgets, we find the small Jongieux district, known for its excellent rousette wines. Another interesting name is Seyssel where the Roussette grape has its origin and where they make ductile and elegant wines with a bouquet reminiscent of iris and violet. In the AUC Bugey you make some single varietal wines, among other things a Rousette, light and pleasant, but not remarkable. The politician and gourmet man, Brillat-Savarin (1755-1826) was born in Bugey and, then, the district has not lost its gastronomic traditions.
Typical dishes
Simple but quality ingredients, strong tastes, authentic flavors: tasting the gastronomy of Savoy is equivalent to taking a trip in the local culture and tradition, closely linked to the territory. The typical products (among all the cheeses and wines stand out) are skilfully combined in recipes with ancient roots, in rustic and tasty dishes suitable for the cold climate and mountain landscapes. The desserts typical of the local cuisine represent a fine nutritious and perfect meal, ideal to delight the palate and warm the heart at the end of a day spent in nature or on skis. Inevitably starting from the gateau de Savoie, the most famous dessert of the region. Tradition has it that it was invented by the court chef of Charles IV of Luxembourg on the occasion of a visit by the sovereign to the Count of Savoy Amadeus VI in Chambéry, a delightful town in the heart of the Alps, back in 1358: it seems that the request had been to prepare a cake "light as a feather". Among the desserts to taste during a holiday in France, especially in Savoie, you can not miss the rissoles, small bundles of pasta with pears. They are prepared with a compote flavored with sugar and spices, at the base of which we find the pears Blesson or Marlioz, typical of the area and very hard (a variant provides for the use of quince, also very common in Savoy) that are cooked and take on a reddish color, from which the sweets are named: in Latin russeolus means reddish.
