Vinification The grapes are 100% destemmed. It starts with a cold maceration (12°C) for a week, then the fermentation is done naturally (no yeast). The temperatures are regulated during the 21 days of vinification. In the morning and evening the vats are pumped over and saturated with CO2.
Ageing The wine spent 3 months in vats and then a year in oak barrels aged from 2 to 8 years. Malolactic is done in barrels.
