Vinification |
Alcoholic fermentation takes place mostly in cement and partly in steel (depending on the vintage) and lasts about 10-12 days. This is followed by malolactic fermentation in cement or steel and cold stabilisation outside or in temperature-controlled steel tanks. |
Ageing |
After stabilisation, the wine continues to age for a few months in cement, steel or fibreglass before being bottled, usually between April and May of the year following the harvest. |
Pairing |
We recommend drinking it chilled, perhaps with a platter of sliced meats or a nice plate of tajarin al ragù. |
