The Tolaini estate is located in the heart of the Chianti Classico territory, where Sangiovese has a unique character. The company's technical team has identified in Vineyard No. 7 in Montebello a special correspondence between the soil, rich in clay and marl, the slope and the exposure; characteristics that over time have resulted in a flawless and original Sangiovese. Chianti Classico Gran Selezione, after resting in the cellar for 30 months, is harmonious, savoury and fruity, capable of expressing elegance and intensity in the glass..

Harvest Grapes are manually harvested and sorted twice, first when they arrive at the winery as bunches and then again after de-stemming by an optical sorter.
Fermentation period 20 days.
Vinification The whole berries are immediately put into stainless steel fermentation tanks and a smaller portion into French oak fermenters. The temperature in the tanks is computer controlled; the must is kept in contact with the skins for about 20 days. Remontage occurs every 8 hours with one delestage per week. A long maceration occurs after fermentation. Malolactic fermentation in 25 hl large oak fermenting casks.
Ageing 18 months in 25 hl oak casks of which 6 are on the fine lees, 6 months in stainless and a further 6 months in bottle.
