By hand, with small crates in the second decade of October. |
Vinification |
Grapes are destemmed and gently crushed to preserve their integrity. The grapes undergo a soft pressing and the must obtained is decanted into steel vats. Fermentation is spontaneous, with indigenous yeasts, at a controlled temperature of 16°C. |
Ageing |
Before bottling, the wine rests for 12 months in stainless steel. |
