The "Metodo Ancestrale" (Ancestral Method) is the traditional production method of Prosecco. This type of Prosecco was widespread in farmers' homes on feast days. In the town of Monfumo, this ancestral Prosecco is made with Bianchetta grapes, an indigenous grape variety cultivated on these hills.

Harvest By hand in mid-September, with crates and the selection of the bunches.
Vinification Whole cluster vinification with soft pressing and cold maceration. The fermentation is partly carried out in acacia barriques and stainless steel vats.
Ageing Long period of maturation on the fine lees for 5 months at the end of fermentation, then in the bottle for at least 9 months.
