||The grapes are picked by hand in boxes. After being destemmed , the grapes macerate in press for few hours before to take temperature and to begin the fermentation.
||On noble lees, in steel tanks, a small percentage, matured for a few months in French oak barrels.
||Sea and land starters, fish with potatoes and fresh tomatoes, soft cheeses, mature cheese.
