Sibiliana is the Cantine Europa Group's new project created to enhance and select the best grapes from its members to obtain unique wines of the highest quality, capable of satisfying the most current food and wine trends. Excellent raw materials and product innovation, combined with the outstanding reliability of Cantine Europa, will make "Sibiliana" the added value to move forward into the future, but with respect for the traditions. |
Vinification |
After being hand-picked, the grapes are quickly brought to the winery, gently pressed at a maximum pressure of 1 bar, and immediately chilled to 16°C. The high quality must obtained is prepared for fermentation with the selected ones at a temperature of 16-18°C for 15-18 days. |
Ageing |
In temperature-controlled stainless steel tanks with yeasts. |
Pairing |
It is excellent with shellfish typical of western Sicily but can also be served with lightly aged or fresh cheeses. |
