In Sicily we have achieved truly fantastic results in the production of Spumante from Grillo grapes. For this reason, we have produced Purato Grillo Spumante, a unique wine that was added to the Purato line only 2 years ago. It is a unique and unusual wine, a valid alternative for consumers with a desire to discover something new. It's a versatile and refined wine that satisfies every type of occasion.

Vinification	After destemming, the bunches of grapes are transferred to a pneumatic press from which the free-run must is obtained through a soft pressing that maintains the organoleptic characteristics of the Grillo unaltered. The must is cooled and the solid particles are allowed to precipitate naturally, and then a clear must is extracted ready for fermentation, which takes place in temperature-controlled steel tanks.
Ageing	The sparkling process of Grillo Brut takes place in small autoclaves at a temperature of about 14 °C where the yeasts work very slowly, creating an elegantly fine perlage and maintaining the freshness and typical aromas of Grillo.

Pairing	Balanced in the mouth, fresh and bright, it lends itself magnificently to aperitifs and delicate fish dishes.
