Around the middle of October, however influenced by the climatic conditions of the year, harvested entirely by hand. |
Vinification |
Fermentation: in steel barrels at a controlled temperature of about 26-28 °C for 10-12 days, numerous pumping over and racking after the malolactic fermentation, the wine is put into wooden barrels for ageing. |
Ageing |
18-22 months in large oak barrels and once bottled it rests for at least 6-8 months in a horizontal position before being placed on sale. |
Pairing |
This wine has its natural combination with the great dishes of Piedmontese cuisine, braised beef, wild boar and game. Superb with patti enriched with white Alba truffles. Ethereal and meditative wine, to be uncorked in front of a fireplace in good company. |
