Harvest |
Grape harvest from mid-September to early October, manual and mechanical harvesting of the grapes on the new vineyards. |
Vinification |
After a soft pressing, the must undergoes initial fermentation in temperature-controlled cement vats. |
Ageing |
It is then re-fermented in autoclaves, following the typical production principles of the Martinotti or Charmat method, carrying out the prise de mousse. After a period of stabilisation, the Rosé is finally bottled. |
Pairing |
Excellent as an aperitif, it is an excellent accompaniment to hors d'oeuvres, cured meats, risotto, white meats and grilled fish. |
